To those of you who are curious about bread machines or already have a machine but rarely use it, this post is for you.

Everybody knows that I love to bake homemade bread from scratch. Using a bread machine couldn’t be easier, and it makes some fantastic bread! A bread machine combines convenience with flexibility. If you enjoy a fresh loaf of bread, but don’t have the time or space to bake from scratch, a bread machine is for you.

If you’ve tried to use a bread machine without success, consider that bread-making is a skill that usually improves with practice. Expect some failures in the beginning. However, I predict fewer fails with a bread machine than mixing by hand. Just don’t give up. Keep trying if you are just starting your home bread making adventures.

Or if you have never baked homemade bread before and find the instructions a bit intimidating, I encourage you to try it. It may seem intimidating at first, and the various steps take a bit of time to learn, but overall, it is straightforward.

Hi. I have a Breadman Ultimate machine without sweet cycle. Which cycle is better to use for sweet breads like challah bread or Portuguese bread?

Hello Manuel,

The “Sweet cycle” setting in several bread machines is also called a “fruit and nut” setting. Does your machine have it?
Just never use the “French” cycle for sweet yeast bread, as you can accidentally overproof (burn) your loaf.
If your machine doesn’t have the “fruit and nut” setting. You may try to use the “Basic” setting with light Crust, but it may also burn it.
Another great way to enjoy making Challah Bread is by using your bread machine on the “Dough Cycle” setting.
It makes the job a lot easier since your machine will do most of the work, the kneading and the rising.
Then remove the dough once it has risen, shape (braid) the bread, give it one more short rise and then bake in your oven at 175°C/350°F until the internal temperature is 88°C/190°F.
Bread will be done when its crust is firm and browned, and the underside of the loaf is also firm and makes a hollow sound when tapped.

My bread maker does not have a “French” setting. What kind of settings should I look for to achieve good results for French bread?

Hi Isobel,

The “Basic”, also known as “Standard” or “White”, can also be used for French bread (and also Whole wheat) if you don’t have French (or Whole wheat) cycle. This is the all-purpose setting you’ll probably use most often, more than any other because it gives you the best results with just about any simple bread recipe.
Some bakers like a dark crust on their French bread. You can also try it if yours has the option.
Just do NOT use the “Basic” cycle for sweet yeast bread, as you can accidentally overproof your loaf.
